Stevioside is the main strong sweet component contained in Stevia Rebaudiana Bertoni, which is a white or slightly yellow loose powder or crystal under normal conditions. It is stable at room temperature, with a sweetness of about 300 times that of sucrose. Its taste is similar to sucrose, with pure sweetness and no odor. The residual flavor lasts longer than sucrose, and its calorie content is only one-third of sucrose. It is non alcoholytic, has good thermal stability, low toxicity, and has a wide range of applications. It is known as the third natural sugar source after sucrose and beet sugar.
